Our Heritage Late Disgorged Cuvée is created using the time honoured ‘méthode traditionnelle’, ageing for 8-10 years in bottle and disgorged on demand. A rich palate of tangerine, toasted sourdough, cultured butter, honey comb and almond praline. All tightly held tightly together with vibrant citrus fruits that drive line and length.

Vineyard LocationVineyard Location
Situated in Hahndorf, Adelaide Hills, at an elevation of 450m, this wine originates from a singular south-facing block within our Ravenswood Lane vineyard. Harvested on February 17th, this elevated site features sparkling Chardonnay clones G9V7 and B277, adding unique character to the blend.
Season
2016 was a year of exceptional quality. The beginning of the season saw a drier, colder winter with below average rainfall leading to an early budburst and lower yields. Average temperatures in summer with minimal heat events and above average rainfall provided a slow, even ripening period and a long vintage, ideal for flavour development and excellent acid retention.
Vinification
Handpicked in the cool morning, Chardonnay grapes underwent immediate whole bunch pressing, extracting the pure free run portion at 550L/t. After settling for 6 hours, the juice was racked into a mix of 228L Barriques and 300L stainless steel Hogsheads. A portion was inoculated with a chardonnay-specific yeast, enhancing varietal characters, while the rest underwent wild fermentation for complexity. After 2 to 3 weeks of steady fermentation and 9 months on lees for Malo-Lactic fermentation, the blend was crafted with 8% new oak and 92% seasoned/stainless. The base wine underwent tirage, with secondary fermentation in the bottle, aging on lees for 8.5 years, and disgorgement with a 4.5g/L dosage.
